Monday's Menu

Hey there friends!!!  Hopefully you all made it through Monday in one piece!   1 down, 4 to go right? 

Some of you are asking what else I eat throughout the day, other than dinner so I'm going to share with you. 

Disclaimer:  I EAT SNACKS!!!  I EAT CANDY!!  I EAT REAL FOOD! 

Now that that's outta the way... onto today's menu.  As with any day, I start with 24 oz of water on the drive into work.  At work, I drink 2 -6oz cups of coffee.  I put 2 tbsp of creamer in each cup.  The creamer varies, but I usually buy whatever I want.  It doesnt have to be non fat, or sugar free.  I figure its better than the 400 calories in a Venti Caramel Macchiato from Starbucks that I REALLY want.

Breakfast was a 45 calorie slice of toast.  Sara Lee Delightful 100% Whole Grain! Very tasty!  I topped it with 1 tbsp Peter Pan WHIPPED Peanut Butter.   If you havent tried this, you MUST!   It's 150 calories per 2 tbsp, vs 190-210 calories per 2 tbsp for regular peanut butter.  Its awesome!  I LOVE peanut butter so this is a great find for me!  

Lunch was a tostada. Same tostada that I had on Thursday night I believe.  That will be my lunch of choice this week.  Well, up until Wednesday, then Thursday and Friday I gotta figure something else out.  I only had enough ground turkey for four meals.

Afternoon snack was supposed to be a Dannon Light and Fit and a Fit and Active string cheese, but that didnt happen because Lesley (co-worker) came in with pretzels, and we dipped them in the whipped peanut butter. BEST.IDEA.EVER!  It was really good.


After work I went to the grocery store to pick up a few things and couldnt pass up this little number... oooh boy was it delightful.  Totally worth the 110 calories.  Russel Stover, you've outdone yourself my friends!!!  Thank god I only bought ONE!   Had I bought more, I definitely would've eaten them all!!

Then the gym.... as my routine is usually work - gym - home in that order.  Today was arms/back/shoulders.   Ran 2.5 miles before that for a grand total of 807 calories burned in  70 minutes. 


Finally onto dinner..

I was craving a cobb salad!  So I made my own version at home.  
Romaine lettuce
2 strips of REAL bacon crumbled,
1 small roma tomato
1 oz Kraft Italian Blend shredded cheese
2 tbsp of Bolthouse Farms Ranch dressing (Thank you Lis and Pam for telling me to try this for months now!)

Calories - 278


In addition to the salad, I made 4 oz baked chicken breast, topped with 1/4 cup Ragu Light Parmesan Alfredo and added some sauteed spinach.  YUM!  

Calories - 268




Calories for dinner - 546
Carbs - 9
Protein - 40 grams









Today's total calories: 1474 (NET 667 after the gym)
Carbs - 89
Protein 86

  1. FYI...I use a peanut butter that is even lower in calories that you might be interested in. It's called PB2 and it's peanuts that have been roasted and then most of the fat has been squeezed out of them. You mix it with a little water and it is really good. Only 45 calories for 2 Tbsp.
