Today was our first full week of the 40 by 40 challenge, and I'm proud to report I'm down 2 lbs!! woot woot!!
217 to 215. Well, 214.8 but I'm a rounder.. So, it's 215.
I have NO CLUE how this happened, and I'm totally okay with that. I'll take my 2 lbs and run with em!! That just motivates me even further! 215 is also one of my "mini goals". I set my mini goals up in increments of 10 lbs at a time. My next mini goal is 205, which I'm hoping to hit by August 1.

Breakfast - 5oz canteloupe and 5 oz watermelon. I was FULL after this. I ate around 9:30 am, and it kept me comfortably full until 12:30... One of the MANY reasons I love my band!
Lunch - 3 Lean Cuisine Spring Rolls. If you have yet to try these, you MUST! They're so good! You get 6 in a box, 3 are packaged together, and 2 packages in one box, for 2 lunches. They're on sale this week at Schnuck's for $2.00. I dont know about you but $2, for 2 lunches?? Yep, sounds like a deal to me!
They come in 3 flavors, 200 calories for 3 spring rolls. They're EXCELLENT dipped in some low cal ranch mixed with hot sauce, or plain greek yogurt mixed with hot sauce. It cures my Mexican fix!
Afternoon snack - chicken quesadilla (3 oz chicken breast chopped and tossed in Budweiser wing sauce, 1-70 calorie tortilla, and 1 oz shredded cheese)
Dinner tonight is a 4 oz piece of cod (brushed with EVOO and baked) and 1/2 cup mashed potatoes)
I opted for a cocktail after the gym... 1 oz pink lemonade vodka mixed with 6oz margarita flavored Crystal Light. Ummm can you say DELISH!!?? And for 70 calories.. Yep, I'll take it!
Gym today was 35 minutes of cardio and 30 minutes of arms/back/shoulders. I wasn't able to run today because I wore a thong to the gym. I never do this, and I just forgot about it. Basically, it was totally uncomfortable so I opted for the elliptical on the interval setting. Resistance at 10, and the ramps fluctuating between an incline of 8 and 10. I did this for 20 minutes, and the Stair climber for 15., for a total of 65 minutes today, and 724 calories burned.
