The benefits of skipping the gym

Ohhh how I love skipping the gym...  okay, not really.  I actually love going to the gym.  There are just some days where I don't have it in me.  Like Friday's.   I feel like the week has caught up with me, and all I wanna do is go home, get in comfy clothes, and veg out.   And that's EXACTLY what I'm doing this evening.  On the agenda this evening... a few glasses of pinot grigio and snuggling with my Best Girl watching rented movies. Ahhhh love it! Especially because the weather here is gloomy and rainy today.   That just means I'll have to make up for my absence over the weekend.

But - a girl's still gotta eat right??  Of course!

Tonight's dinner is one of my favorites!!  In addition to being a hot wing and pizza lover, Mexican food is one of my all time favorites!!  If I could have chips, queso and 'ritas everyday, I would!  
Since it's not figure friendly, I found a way to cure that craving at home. 


4 oz - Perdue Ground Turkey
1/4 cup - Taco Bell Fat Free Refried Beans
2 - Old El Paso Tostado Shells
1 tbsp Philadelphia Cooking Creme - Santa Fe Flavor
2 tbsp - Taco Bell Medium Taco Sauce
2 tbsp - Dannon Greek Yogurt - Plain
1/2 oz Kraft shredded cheese - Nacho flavor (not shown)



I mix the refried beans with the cooking creme and taco sauce, then microwave and put that on the first tostada.   Place the 2nd tostada on top, and put 4 oz of ground turkey mix (flavored with your favorite taco seasoning, I use Taco Bell brand), then top with 1/2 oz shredded cheese, and 2 tbsp of the greek yogurt (as sour cream - higher in protein, and half the calories of light sour cream)

Stats:     435 calories
               28 carbs
               32 grams of protein

Nobody's bringing unlimited chips and salsa to my table at home, but I still get all of the flavor and NONE of the guilt!

  1. Delicious!!! Robbie fixed up some amaze-balls mexican this weekend. He took chicken breasts and marinated them in a little EVOO and a packet of McCormick's chicken taco mix. He let them marinate around 30 minutes and then grilled them up, cut them into small bite sizes and we added some fat free refried beans, tomatos, green bell pepper and a little cheese on a low carb tortilla, MMMMMMMM!!!!!!!!!!!
